This is very straight forward if you follow the user guides.
What you are looking for is the section to configure bluetooth controllers, you can add a plethora of functions/actions that even most people will never use. A full mapped controller is quite easy.
I can guarantee that any 8bitdo bluetooth controller will be compatible, as this is what I use.
Things will require more dedication if you wish to have multiple controllers over different platforms or gaming consoles, this will ask of you to add a little bit of code to specific scripts designed for each controller and/or platform. You know, to permanently keep track of what you want the pie to do.
HDMI is super easy, just make the physical connection and should display it. In some cases it is necessary to adjust the output resolution.
When you double as a console, I would recommend to have it plugged in instead of draining you battery. The bypass function will save you charging cycles from your battery and will prolong its life, less degradation.
I use mine as a console 1/2 of the time i use it.
