So, the key here is this output from dmesg:
[    2.258979] mk_arcade_joystick_rpi: unknown parameter 'gpi' ignored

And your conf line that looks like this:
options mk_arcade_joystick_rpi map=4 gpi=4,17,6,5,19,26,16,24,23,18,15,14,-20,42,43,41,40,-1,-1,-1,-1 hkmode=2

It should say gpio instead of gpi.

... I feel silly for not picking up on that. Thank you so much for your help; I look forward to trying it out in the am!
